Since we're participating in the pantry challenge this month and I'm trying to live a healthier lifestyle, I thought I would make my own. I adapted my recipe from this recipe.
Orange Cranberry Muffins
- 1/3 cup softened butter
- 1/2 cup orange juice
- 1 egg
- 1/2 cup sugar
- 1 1/2 cups all purpose flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 cup dried cranberries (I used craisins, cause it was what I had in pantry)
Mix butter, egg, sugar and orange juice. Add in remaining dry ingrediens.
Bake for 15 minutes.
(Next time, I think I will grate some orange rind into the mix, to see if the orange flavour will be a little stronger.)

I have an orange muffin recipe where you puree a whole orange with some orange juice - it's delicious! I usually put dates or chocolate chips in them, but cranberries would be really good too.
mmmm yummy! ive never tried any type of fruit muffin - this sounds good!
We just had orange cranberry muffins for breakfast. Our recipe is quite similar, we just use whole wheat flour and applesauce in place of the oil. Delicious.
