My husbands uncle Richard shared this recipe with us during his last visit from Scotland.
Uncle Richard's Lentil Soup!
2 -3 carrots (diced)
1 onion (diced)
2 potatoes (diced)
(1 leek, optional)
(1 cup of chopped cooked ham, optional)
1 chicken stock cube
2 cups of red lentils - dried
Put all ingredients in Dutch oven and add enough water to cover. Bring to a boil and then simmer for 1- 2 hours.
