Keeping track of open Containers in your Fridge/Pantry

Do you ever look in your fridge and wonder when it was that you opened a jar/bottle?  How long as it been sitting there?  Now, I'm not talking about containers with cooked food, I'm talking about the ketchup, chutney, pesto, cookies, flour, etc.  I know, I know.  They all have best before dates, but I personally think the best before date changes after it's been opened.  What about the pantry?  Does some cereal hang around forever sometimes? So here's my tip...

Use one of these... 

Just add the "Opened-on date" to your package and there is no more guessing about when you actually opened it.

I use my sharpie as well to date packages that end up in the freezer.  Sometimes it has smudged a little, but it don't really matter to me.  I'm not that picky.

Cleaning out the fridge and Sour Cream Choc. Chip Muffins

My normal shopping day is Fridays.  In my area, I get my flyers on Thursday nights and all the new sales start on Fridays.

Thursday is designated Leftover dinner night, so that I can clean out the fridge and start fresh for the new week.

If I have any veggies left over I throw them in a pot with leftover meat, homemade broth and a few spices and create a Leftover soup.  Or I just heat everything up and put it on our kitchen island and call it Restaurant Buffet night.

Once the fridge is nearly empty, I wipe it down with a hot soapy water and it's ready for the next shopping trip.

This week I had a few bits and pieces in the fridge and pantry that needed to be used up: a little bit of sour cream, a couple of eggs, a handful of choc chips... hmmm... it was begginning to sound alot like Sour Cream Chocolate Chip Muffins.

They are yummy!

Happy Earth Day!

I must admit growing up I didn't really understand what all the hoopla was about.  Let me back up a bit.

I was born and raised until the age of 8 on a farm on the coast of Portugal.  Everything we ate and drank came from the earth.  My mom would be up at 6  in the morning to take our 3-4 cows to the dairy to get their milk out and then she would bring home a carafe of fresh milk.  We always had pigs, sheep, chickens, ducks and you name it, grazing in the back yard.  Our back yard was also filled with fruit trees ready to picked at any time.  Any kitchen waste was automatically recycled by feeding back to the animals.  The cows muck was used in the land to fertilize it.

At the time there were no garbage trucks to come pick up bags of garbage for the landfill.  Any clothes that I outgrew or became too worn out was handed down to a cousin or neighbour or to my grandma to make rag-rugs.  All the wood that we came accross was used in the firepit to cook, and heat water for bathing.  Oh yeah, my parents didn't have indoor plumbing until many years later.

When we moved to Canada at the end of 1979, it was culture shock for me.  As a child it took me a few years to adjust.  I never did drink store bought milk again... it tasted funny to me.

My parents having grown up in an environment where you had to be self-sufficient and re-use and recycle everything until there was nothing left to do with it, didn't understand this concept of blue boxes - so they never used them.  They no longer had poultry in the back yard - so kitchen waste was put in the... waste basket.  I remember visiting my favourite Aunt F and noticing she had a blue box.  hmmm... interesting.  My mom never really caught on to the idea.

It wasn't until I met my soon-to-be husband that I was introduced FULL FORCE to re-use, reduce, and recyle.  Our first christmas together while dating I went to great lengths to wrap his gift in pretty wrapping paper, bows and ribbon.  On the other hand, soon-to-be hubby handed me my gift as-is and went on to tell me about what happens to wrapping paper after it was used (as he opened his gift).  At the time I was offended, but now it makes sense.  I rarely wrap gifts anymore, and I prefer to re-use giftbags (until they rip). 

In our houselhold we teach the kids to re-use, reduce and recycle. 
  • We compost!  We have two compost bins that we dump all of our kitchen veggie and fruit scraps,  used coffee groundss and tea bags, used paper towels, newspaper, eggshells, etc. into to
  • We buy in bulk.  For example, I buy larger containers of yogurt and then divide them into smaller reusable containers for the kids school snacks, etc. 
  • All of our kids clothes gets handed down to someone else.  Most of our kids clothing is handed down from friends and family with older children and so we pay if forward by doing the same thing.  Clothing with stains and holes get repurposed as cleaning cloths.
  • In warmer months we use a laundry line to dry our clothes.  Although I prefer to use a dryer because our clothes come softer, I know that line dried clothes are more environmentally friendly and better on the budget too.
  • I buy environmentally friendly cleaning products or use plain vinegar and lemon.  I recently read somewhere that Vodka is also a good cleanner.
  • Small appliances are unplugged when not in use.  I read somewhere that appliaces with a clock or timer are still using electricity when not in use... so I unplug them.
  • We don't buy paper plates, cups or utensils.  Those just end up in the garbage.
  • We aim to only have one bag of garbage everyweek for our family of five.  However we have 3 recycling boxes that are generally overflowing.
I know that there is sooo much more that we can do, but we have the best of intentions.

I'm a soccer mom!

Oooops... I just realized that the last time I posted was well over a month ago.  I have the best of intentions at the begginning of each month and then before you know it it's the end and the new month is half way through and... well you get the picture.  :)



This weekend we got the official e-mails from our kids soccer coaches welcoming them to their teams and introducing them to the new soccer season.  This season the two girls will be playing and/or practising on either a Monday or Wednesday and different places accross the city at about the same times plus or minus 30 minutes.  So, first thought... this is going to be a juggling soccer-mom nightmare! Hubby has decided to help out at as assistant coach on S.'s Under 12 team, so that will help with the drop off/pick up times.  The drawback is that I won't be able to see any of her games because I will be accross town at H's practice/games; and vice versa for hubby.  uuugggh  After closer inspection I noticed that there is an overlap of about 30 minutes at fields that near to each of the other on a couple of nights.  I might risk getting a speeding ticket and get to the other field to watch.

Ok enough of ranting about my scheduling nightmare and more to getting this season organized.

One thing that I do to keep myself organized and on budget throughout the season is to have favourite meals in the freezer at all times.  Time to stock up the freezer with our favourites!  I'd love to hear about what your family's favourite summer meals are...

What's for dinner? Curried Roasted Butternut Squash Soup

I try to have a meatless dinner at least once a week. It's good for the budget, and great for the kids.  Long ago I discovered that if I puree all the veggies, the kids won't complain and then will eat whatever I make (as long as it tastes good).  So I came up with Curried Roasted Butternut Squash Soup.

This soup is sooooo easy and simple, that it's crazy.

Ingedients:

1 Butternut Squash, peeled and diced
1 red pepper, diced
1 onion diced
2 cups chicken broth
1 tblsp of prepared Curry paste
1 tblsp garlic powder
2 tblsp olive oil
salt and pepper to taste

Directions:

I started off by chopping the squash and onions,  and I used some frozen red pepper from the feezer.  Sprinkle garlic powder and olive oil over the veggies and mix around.  I mixed right in the 9x13 pan that I was using.  Then roast in oven at 400 for 20 minutes, mixing it half after 10 minutes.


Then I added the curry paste to the chicken broth and started boiling it on stove. 

Once the veg mixture was soft I pureed in blender along with some of chicken broth.
Add the puree to the rest of broth, and salt and pepper to tast.


It was yummy and no complaints. My favourite kind of meal!!

Small table Redo

What a beautiful weekend.  I woke up to birds chirping outside my window.  What a great sound.

The kids were playing outside all day.  Although the snowbanks are still melting, the sun was shining.  Of course I hate to jinx myself and get too excited and then we get hit with another downfall.  I hate to be Debby Downer but that's my reality living in Southwerstern Ontario.

So, while the kids played, I did some playing myself.  Recently,  I found this little side table at Goodwill for $4.99.  It was ok... but the colour of the wood didn't really match my other dark furniture in the house.


So I got out some paint Black Satin leftover from the Powder Room cabinet re-do (which I will show you soon) and got painting.



I started off by painting the legs and everything and then changed my mind and wiped the paint off.


I loved how some of the paint got into the grooves and scratches.  I didn't sand it down first cause... let's face it... I'm lazy.


ooops... look at those stroke marks!! I still need to do a light coat of Poly to protec it and then I think I will use it in my son's bedroom.

Guess Where I've been?

It's been awhile since I last posted... there is a reason though.


Yeap, we were at Disneyworld in Florida.  I must admit it was not a vacation that I was looking forward to and I've actually managed to talk hubby out of it for the past 3 years (or more).  But I gave in this time and off we went.

We stayed at one of the Disney Resorts, Port Orleans Riverside. I couldn't believe with the number of kids passing through the place, how clean everything was.  The staff cast members were all sooooo friendly and helpful.  They sure set the standards for customer service that should be used worldwide.  One the wonderful morning ladies that we saw everyday said that Mickey Mouse doesn't like grouches.

We ate way too much food!  We got the deluxe Meal plan, cause I had heard that everything is so expensive down there.  Yeap, everything was expensive.  But their Meals are really BIG and anyone over the age of 9 is considered an adult and gets an adult meal.  The three kids could've split one adult meal.  And who can eat a dessert after every meal?  One the last day (a couple of hours before we left) we still had 10 meals leftover and I think 12 snacks.

The kids got to meet some of their faves.


S., got to battle with Darth Vader (she won).



And I got the sheesh scared out of me.

(While in one of the shows I had to take off the glasses and contort into the fetal position in a tiny chair, 'cause I was sooo scared.  The kids thought it was hilarious how scared I was.)



** Warning: when you are asked to wear these funky glasses, beware that snakes might come at you, mice might crawl between your legs, bees might sting in you in the back and bugs might run under your butt.**  Darned special effects!!

I got me a new hat.  You like?


So we are back now, with our spinal cords a little compressed.


And now I can get back to business.  I think next year, I'll plan a vacation where I'm laying on a beach somewhere this time of year.
